For the protein, feel free to use any you choose: chicken, cooked salmon, stir-fry beef or a vegan option like tofu, legumes or seeds. Makes an awesome dinner meal in summer.
- Salad greens chopped roughly
- Cucumber sliced or cubed
- Avocado cubed
- Beetroot grated
- Carrots grated
- Protein of your choice
- Salad cheese – feta cheese, goats cheese, blue cheese, whatever you like
- Optional: pumpkin and/or sunflower seeds
- Toss with extra virgin olive oil and optional balsamic vinegar.
- Refrigerate until needed.
